Spicy Minced Pork With Eggplant

A friend of mine doesn't like vegetable. He prefers meat in his dinner. However, there's a famous Chinese dish which combines meat and vegetable in a perfect way - Spicy minced pork with eggplant. It's a dish with full of flavour and it contains vitamins and protein.




















Ingredients

200g minced pork 
3 eggplant 
2 clove garlic (finely chopped)
Oil

Garnish 
Scallion rings

Marinade pork 
1 tsp salt 
1 tbs soy sauce 
1 tbs Chinese wine 
1 tsp corn starch 
Pepper 

Seasoning
2 tbs oyster sauce
2 tbs Chinese wine 
2 tbs soy sauce  
1 tbs sugar 
1 tbs chilli garlic sauce  
2 tsp salt
Pepper 
100 ml hot water 

2 tsp corn starch +   3 tbs water

Method

1. Cut the eggplant in strips. 

2. Marinade the minced pork for 15 minutes. 



















3. Pre-heat the wok with 3 tbs oil. 

4. Add eggplant in the wok, stir fry for 10 minutes over high heat. 

5. Put the eggplant in a bowl. 

 

















6. Pre-heat the wok with 2 tbs oil. 

7. Sauté the minced meat for 5 minutes over medium heat. 

8. Put the minced meat in a bowl.





































9. Preheat the wok with 2 tbs oil. 

10. Add garlic in the wok and cook for 1 minute over low heat. 

11. Add minced meat and eggplant, stir fry the ingredients. 





































13. Add the seasoning in the wok. Put the lid on it and cook for 5- 10 minutes over medium heat. 

14. Prepare a bowl with corn starch and water and mix it well. 

15. Taste the dish and pour the corn starch mix in the wok (keep stirring the dish at the same time).

16. Garnish the dish with some scallion rings and serve with steamed rice. 





































Note

* Taste the dish and add extra seasoning if it's necessary. 

* You can get the oyster sauce and chilli garlic sauce in the Asian shop.
