Roasted Vegetable

What I'm going to show you today, is one of my favourite side dishes. Make the dish colourful with different kind of vegetable. Add seasoning and pop it in the oven. Ten minutes before the dish is done, grill some meat or fish and your dinner is ready to serve.



















Ingredients (3 servings)

1 pumpkin

2 sweet potatoes 
3 paprika 
2 tomato 
1 onion 
1 whole garlic
250g mushroom

Seasoning
6 tbs olive oil 
6 tbs balsamic vinegar 
2 tbs dried Italian herb 
Salt 
Pepper

Special equipment
Roasting tray

Method

1. Preheat the oven to 200 °C.

2. Wash all the ingredients and cut in chunks. Keep the garlic whole. Put everything in the roasting tray.



















3. Add the seasoning in the roasting tray. Mix everything together.



















4. Put the roasting tray in the oven and bake for 40-50 minutes. Gently stir the vegetable so that the vegetable roast evenly.

Serve the dish with grilled pork belly for example. 

Note

* You may use other vegetable like courgette, aubergine, carrot or potato.

Pangasius Fillet With Mango Salad

Tonight I'll have dinner with my lovely cousins. Before I leave home, I have prepared the pangasius fillet with mango salad for my fiancé. For our new lifestyle, we are trying to eat less carbohydrate and exercise. So this would be the perfect dinner after the workout in the gym. 

 






















Ingredients (2 servings)

2 pangasius fillet
1 mango 
8 cherry tomatoes
225 g cans giant beans (drained)
100 g cans corn (drained)
20 g spinach
1/8 red onion (finely chopped)

2 tbs olive oil 
Pepper 
Salt

Dressing salad
1 tbs olive oil 
1 tbs lemon juice 
Pepper 
Salt 

Method
 
1. Cut the mango along the sides of the pit.You should end up with 3 pieces.

2. Take the mango piece with the pit and cut out the mango with a paring knife. On the other hand, cut 1/2 of the mango half in chunks. 

3. Blend the mango pieces. Sprinkle some pepper and salt in the dressing.

 

















4. Cut the rest of the mango in cubes. 

 







































5. Wash the spinach. 

6. Wash the cherry tomatoes and cut into halves. 

7. Put the mango cubes, giant beans, corn, spinach, cherry tomatoes and red onion into a mixing bowl. Add dressing salad and mix everything together. 

 


































8. Sprinkle salt and pepper on the pangasius fillet (both sides).

9. Preheat the sauté pan and add 2 tbs olive oil. Sauté the pangasius fillet untill done. 

 

















10. Plate up the salad, pangasius fillet and mango dressing in your own way.

Avocado Walnut Spread

My fiancé brings sandwiches to work everyday. Yesterday he told me that he wanted to have something else between the bread, that means no ham, cheese, peanut butter or chocolate spread. At that moment, I saw an avocado at home, so I made him the avocado walnut spread last night and today he brought his new sandwiches to work :D
 


















Ingredients (2 servings)

1 avocado
2 eggs 
20g walnut (chopped)

Seasoning
2 tbs lemon juice 
1 tbs olive oil 
1 tbs mayonnaise
Salt 
Pepper 

1. Place the eggs in a pan with cold water. Heat over high heat to boiling. 
    Turn to medium heat and cook for 4 minutes.

2. Drain the eggs and cool completely under running water.

3. Peel the eggs and chop in chunks. Put the chopped eggs in a bowl.


 
















4. Cut the avocado in cubes. Add in the bowl. 


 
















5. Add seasoning.

6. Use the back of the fork to mash the eggs and avocado. 

 



















 












 

 7. Add the chopped walnuts and mix everything together.


 
















8. Spread the avocado spread on bread, toast or cracker.

1000 Island Tuna Pizza

Last year Easter I made a brunch and it took me more than 2 hours to prepare. This year I kept it simple. I made the thousand island tuna pizza, served with salad. Great food, family and weather, how couldn't I have an happy Easter.


















Ingredients (3 servings)

1 cans tuna (drained)
3 pineapple ring
1/3 onion (chopped)
100 g grated cheese
3 pita bread 

3 tbs thousand island dressing 
Salt 
Pepper

Special equipment
Baking tray covered with aluminium foil

Method

1. Preheat the oven to 200°C.

2. Cut each pineapple ring in 8 pieces. 

 

















3. Put the tuna and chopped onion in a bowl. Add pepper and salt. 

 

















4. Add the thousand island dressing and mix everything together. 

 

















5. Put the pita breads on the baking tray covered with aluminium foil. Spread the tuna mix and place the pineapple on the pita bread. 

Sprinkle with grated cheese. 

 
















 
















 
















 

















6. Bake the pizza for 20 minutes.

7. Serve the pizza with salad.

Broccoli Cheese

How do you prepare broccoli? Boil it? Stir- fry it with garlic?
Feel bored about these methods? 
Let's make the broccoli with cheese sauce and crispy bacon on top. 
It's very easy to make and surprise you beloved with this lovely dish :D 



















Ingredients (2 servings)

1 broccoli
3 strips bacon
4 cheddar cheese
1 clove garlic (finely chopped)
150 ml chicken stock

3 tbs oil
Salt
Pepper

Method

1. Wash the broccoli and cut into small florets.

2. Cook the broccoli in salted boiling water until done.



















 3. Cut the bacon in small pieces.

4. Preheat the cooking pan with 1 tbs oil and sauté the bacon. Set aside.

 

















5. Heat up 2 tbs oil in a cooking pan. Add garlic and cook for 1 minute over low heat.

 

















6. Add chicken stock and cook for 1 minute.

 

















7. Add cheese. Cook until the cheese fully melts. Season with pepper and salt.

 

















8. Serve the broccoli with cheese sauce and garnish with bacon pieces.

Chinese Chicken Salad With Sesame Dressing

Three months ago, I had dinner at my friend's place. The day before I made a Japanese noodle salad and showed the picture to my friend. He said,' You can also use the roasted sesame sauce to make shredded chicken with cucumber.' That's right! Let's make it with
konjak vermicelli, a tasty Chinese chicken salad.



















Ingredients (3 servings)

300g chicken breast
190g konjak vermicelli
1 cucumber
4 slices ginger 
1 scallion (cut in 3 cm long)

Sauce 
3 tbs roasted sesame dressing
3 tbs vinegar
1 tbs peanut butter 
1 tbs sugar
1 tsp sesame oil
Salt
Pepper



Method

1. Sprinkle a pinch of salt on the chicken breast (both sides) and put the scallion and ginger slices on top. Steam for 15 minutes.

 
















 

















2. Let the chicken breast cool down and shred the chicken breast.

3. Cut the cucumber in long thin strips.

4. Cook the konjak vermicelli in hot water for two minutes, remove from water and put in a bowl with cold water. Drain the konjak vermicelli after 5 minutes.

 
















 

















5. Fridge the chicken breast, cucumber and konjak vermicelli for 2 hours. 

6. Mix the sauce in a small bowl. Taste it!

7. Pour the sauce over the ingredients and mix together.



















Note

* Taste the sauce before pouring over the dish.  

* Add chopped chilli and/ or peanuts to pop up the dish. 

* You may use rice noodle or other kind of noodles instead. 

* You can get the roasted sesame sauce and konjak vermicelli in the Asian food store.

Homemade Hamburger

Who doesn't love hamburger? Not only children, adults are also crazy about it! Do you know that hamburgers are very easy to make? Get the ingredients in the supermarket and ask the kids to make hamburgers with you. I'm sure they will love it! 

Ingredients (3 servings)

300g  minced beef 
1/2 onion, finely chopped
50 g bread crumbs
1 tbs ketchup
1 tbs Worcestershire sauce 
1 egg
Salt 
Pepper 

3 burger bun
3 lettuce leave
3 cheddar cheese
2 tbs oil
Ketchup  
Onion rings






Method

1. Mix the minced beef, onion, bread crumbs, egg, ketchup, Worcestershire sauce, salt and pepper in a mixing bowl. 


 














 


















2. Separate the meat into 3 portions, roll into balls and press to flatten. 

3. Heat 2 tbs oil in a pan. 

4. Add the meat in the pan and cook on each side for 3-5 minutes.  


 
















5. Assemble the hamburger with burger bun, meat, lettuce leaves, cheddar cheese, onion ring and ketchup. 

6. Serve with crisps. 





 













Note
* Add tomato slices, pickle slices, baked egg, mustard, mayonaise or other ingredients to make your hamburger more colourful.

Smoked Salmon Soba Salad

Sometimes when I'm home alone, I just want to have a light meal with lots of flavour, easy to make and enjoy it in the sun instead of standing in the kitchen for hours to prepare a lunch for one. This smoked salmon soba salad is just a perfect lunch, it's healthy and takes only 10 minutes to make. 

Ingredients (1 serving)

75g soba noodle

100g smoked salmon
20g cornsalad

Dressing 
2 tbs Japanese soy sauce
1 tbs mirin
1 tsp sesame oil
1 tbs lemon juice

Garnish
Chopped scallion

Sesame seeds








Method

1. Cook the soba noodle in the boiling salted water. Cook 4 minutes or until tender.

2. Drain the noodles, rinse with cool water, put in a bowl with cold water for 4 minutes.

 

















3. Stir Japanese soy sauce, mirin, sesame oil and lemon juice in a bowl. Taste it!

 

















4. Wash the cornsalad and tear up the smoked salmon.

5. Place the soba noodle, smoked salmon and cornsalad in a bowl/ plate. Pour the dressing over the salad. Garnish with some sesame seeds and chopped scallion. 

 

















Note
* Flavour the dressing with extra soy sauce, mirin and lemon juice if it's necessary.

* You can buy the soba noodle, mirin, Japanese soy sauce and sesame oil by the Asian Toko.

Breakfast Strata

Yesterday I had a game evening at my girlfriend's place. I knew that we would make it late, so before I left home, I have made the breakfast strata. It's a baked dish with bread, ham, cheese and much more. Refrigerate it overnight and the bread will soak the egg mixture which makes it taste even better. The next day, preheat the oven and put the the breakfast strata in the oven. Serve with a light salad and fresh orange juice, so there you have your perfect morning breakfast.  

This is also a good idea for the Easter brunch.  



















Ingredients (2 servings)

120 g ham cubes
300 g bread  
100 g shredded cheese 
90 ml milk
4 eggs 
2 tsp Salt 
Pepper

Special equipment 
Baking pan 25x15

Method 

1. Cut the bread in cubes. 

 

















2. Beat the eggs, add milk and season with salt and pepper.

 
















 

















3. Add bread and ham cubes in the egg mixture. 

 
















 

















4. Butter the baking pan and pour the egg mixture.  

 

















5. Spread the shredded cheese on top. 

 

















6. Foil the baking pan and refrigerate overnight. 

7. Preheat the oven to 180°C. Bake for 45 minutes. 

8. Remove the baking pan from the oven.





































A comfy breakfast in the sunny Sunday morning, my day could not be better.

Note

* Sprinkle some Italian herbs and add cherry tomatoes in the mixture for a Italian twist.
