Avocado Salad With Poached Egg

Avocado is good for you. It's rich of vitamins and healthy mono-unsaturated fat.
For the lunch today, I'm going to make a avocado salad on toast with poached egg on top.
The texture of crunchy toast combined with the creamy avocado and poached egg, is such a party in your mouth. 

 

















Ingredients

 


















1 avocado
1/4 apple
20g rockets
2 slices of toasts
2 eggs
1 lemon

Salt
Pepper


2tbs vinegar
water

Method

1. Wash the lemon and dry before zesting.

2. Use a grater to make the lemon zest, place a plate/ bowl underneath.
    1 tsp lemon zest would be enough for the salad. Put it aside.

 















 





















3. Cut the lemon in halve and squeeze it in a mixing bowl.

4. Add water in the mixing bowl. 

 

















5. Cut the avocado in halve and twist the two halves. 



 
















6. Remove the pit and slice each avocado into 2. Peal the avocado and cut it in cubes.


 












 





















7. Put the avocado into the mixing bowl with the lemon juice mix.  

 




 













8. Cut the apple in cubes (smaller than the size of the avocado) and put it in the mixing bowl. 


 































9. Remove the lemon juice mix from the mixing bowl.


 















 

10. Add the rockets in the salad.


 

















11. Season the salad with 1 tbs of lemon juice, 1tsp of salt and pepper and give it a good stir. Taste it!


 

















12. For the poached egg, boil a cooking pan with water.

13. Add 2tbs of vinegar into the boiling water and turn the heat low.


 

















14. Crack an egg into a small bowl.


 

















15. Quickly stir the boiling water in one direction.


 












 





















16. Put the egg in the pan gently and cook it for 3 minutes.  

 












 





















17. Remove the egg from the pan and place it on a board with paper towel. 


 













 




















18. Let's put everything together. Put a toast on a plate. Follow with some avocado salad and a poached egg on top. Finish it with a pinch of pepper and salt.


 













 












 




















 



 My lunch is ready. I can't wait to enjoy it on the balcony and let the sun shines.





















Note
* The lemon juice mix prevents avocado and apple from going brown. 
* Season the salad with extra salt, pepper and lemon juice if it's necessary. 
* Repeat step 12-18 for the other serving.
